Water Chemistry and Extraction
We get this complaint at least once a month: someone buys a bag ofEthiopia Yirgacheffethat tasted incredible at the café, brews it at home with the exact same grind size, and it tastes flat. The beans didn’t change. The water did.
Why Minerals Matter
Extraction is a chemical negotiation between hot water and ground coffee, and dissolved minerals — mostly magnesium and calcium — change how that negotiation goes. Too little mineral content and water struggles to pull flavor out of the grounds at all, producing a flat, sour cup. Too much, especially high carbonate hardness, and the water buffers against acidity, muting the bright notes we roast for in a coffee like Yirgacheffe.
Brightwater’s municipal water skews soft compared to a lot of the country, which is a big part of why a coffee that tastes bright and floral at any of our three cafés can taste thin brewed straight from a home tap in a different city. It’s not you, and it’s not a bad batch — it’s a different mineral profile hitting the same grounds.
What We Use at the Café
All three locations run their water through a remineralization filter tuned to a target range, rather than straight tap or straight reverse-osmosis water. It’s a small setup cost that pays for itself the first week — it’s also why coffee tastes nearly identical whether you order itDowntownor atHarbor.
What to Do at Home
- Never brew with distilled or straight reverse-osmosis water — it has nothing for the coffee to extract into.
- Skip water that’s been through a home water softener; sodium doesn’t behave like magnesium or calcium.
- A basic bottled spring water with moderate mineral content will outperform most tap water.
- If you want to go further, a mineral-additive packet (search “third wave water”) mixed into distilled water gets close to what we use in-café.
- Whatever water you land on, keep it consistent — switching brands week to week makes it much harder to dial in a recipe.
